The Ladybugs' Recipes

Tabouleh (A Mediterranean Salad)

Ingredients:
1 c

bulghur wheat (Found in health food section of store)
boiling water
fresh squeezed lemon juice
olive oil
Kosher salt
chopped scallions
fresh mint leaves
flat leaf parsley
hot house cucumber, unpeeled and diced
cherry tomatoes, cut in half
freshly ground black pepper
Procedure:

1.  Place the bulghur wheat in a large bowl, pour in boiling water.
2.  Let stand until all of the water is absorbed and the wheat can be fluffed with a fork.
3.  Add lemon juice, olive oil, and salt.
4.  Stir and let stand at room temp for about one hour.
5.  Add all other ingredients.
(I used food processer to make sure everything is well chopped up.)
6.  Cover and refrigerate for a few hours (to let the flavors meld together).
