The Ladybugs' Recipes

Italian Tomato Soup

Ingredients:
4 T
1 1/2 c
2 tsp
2 tsp
2 tsp
3 c
3 c
1 can
2 c
2 c
1/2 c
olive oil
diced onion
minced garlic
oregano
basil
green pepper, diced
zucchini, diced
(28 oz.) Diced or Italian Style Tomatoes
chicken broth
wagon wheel pasta, cooked (or noodles) - I used no-yoke
Romano or Parmesan cheese, shredded
Procedure:

1.  In large sauce pan with olive oil. saute' onion, garlic and spices.
2.  Add green pepper and zucchini.
3.  Cook 5 minutes.
4.  Stir in tomatoes, broth and pasta (or noodles).
5.  Bring to a boil.

Ladle into bowls and sprinkle with cheese.

Yields: 12 cups.
