The Ladybugs' Recipes

Mexican Caviar

Ingredients:
1/2 c
1/8 - 1/4 c
1/2 tsp
1/4 tsp

2 cans

vegetable oil
red wine vinegar (depending on how "vinegary" you like it)
salt
hot pepper sauce (or more if you like it HOT)
black beans (drained)
Mexicorn (drained)
chopped onions (Scallions are best
large tomato (chopped)
whole avocado (diced)
Procedure:

1.  Mix everything EXCEPT the tomato and avocado.
2.  Marinate in refrigerator for at least 3 hours, but not longer than 6 hours.
3.  Stir in avocado and tomato.
4.  Serve with tortilla chips.

So good!
