Sweet Potato Custard

Ingredients:

mashed cooked sweet potato
mashed banana (about 2 small)
evaporated skim milk
packed brown sugar
beaten egg yolks (or 1/3 cup egg substitute)
salt
raisins
sugar
ground cinnamon
nonstick cooking spray
Procedure:

1.  Preheat oven to 325ºF.
2.  In a medium bowl, stir together sweet potato and banana.
3.  Add milk, blending well.
4.  Add brown sugar, egg yolks, and salt, mixing thoroughly.
5.  Spray a 1-quart casserole with nonstick cooking spray.
6.  Transfer sweet potato mixture to casserole dish.
7.  Combine raisins, sugar, and cinnamon; sprinkle over top of sweet potato mixture.
8.  Bake for 40-45 minutes or until a knife inserted near center comes out clean.

Serving Size: 1/2 cup
