Mexican Party Wings
From:  TrapperJane
Ingredients:
2 lb
1/2 c
1 pkg
chicken drummettes...about 24-26
flour
(1.25 oz) Taco seasoning mix
Dipping Sauce:
1 c
1 can
ranch style salad dressing
(4.5 oz) lightly drained chopped green chiles
Procedure:

1.  Preheat over to 350º.
2.  Spray large cookie sheet with nonstick cooking spray or try that new "no-stick" aluminum foil!
3.  Combine flour and seasoning mix.
4.  Using the old "Shake and Bake" method - make sure all pieces are completely covered with flour, seasoning mixture.
5.  Place drummettes on cookie sheet and bake for 15 Minutes.
6.  Turn, bake for another l5 Min.
7.  Then keep turning wings every so often until chicken is fork tender and juices run clear.

Dipping Sauce:
Combine ingredients and process in blender until smooth.

If you feel like you like a hotter taste, try a little can of Jalapeno chiles.

I'm one of those cooks that can't leave a recipe alone.....so I do add some extra seasonings, chili powder, cumin if I have it, and I love Emerill Lagasse's Southwest seasonings. Probably about a tbsp. of each, plus some garlic powder...just in case, and some red pepper flakes if you like it "kicked up a notch".
