The Ladybugs' Recipes

Pumpkin Roll

Ingredients:
 
Cake:

1 c
2/3 c
3/4 c
1 tsp
1/2 tsp
eggs
sugar
pumpkin
flour
soda
cinnamon
Filling:
1 c
2 T
8 oz
3/4 tsp
confectioners sugar
butter
cream cheese
vanilla
Procedure:

1.  Preheat oven to 375ºF.
2.  Beat eggs & sugar. Add flour, pumpkin, cinnamon & soda.
3.  Pour onto jellyroll pan (cookie sheet w/ sides) lined with waxed paper (or greased and floured).
4.  Bake for 15 minutes.
5.  Turn onto towel sprinkled with confectioners sugar and roll as a jellyroll.
6.  Unroll when cool & spread with filling & roll again (without the towel!).
7.  Chill before serving.

(I chill it in the towel then turn it out onto a serving plate and sprinkle more confectioners sugar on it to serve.)

May add some finely chopped walnuts to the filling if desired.

Cut in slices and serve. Good served with whipped topping.
