First Layer:

unsweetened cocoa powder
egg, beaten
graham cracker crumbs
flaked coconut
finely chopped almonds (optional)
Second Layer:
1/2 c

2 c
butter, softened
heavy cream
vanilla pudding mix(instant)
Confectioners sugar
Third Layer:

(1oz) squares semi-sweet baking chocolate
butter
Procedure:

1st layer
1.  In the top of double boiler, combine 1/2 c butter, sugar and cocoa powder.
2.  Stir occasionally until melted and smooth.
3.  Beat in the egg, stirring until thick, 2-3 minutes.
4.  Remove from heat and mix in graham cracker crumbs, coconut and nuts.
5.  Press into the bottom of ungreased 8x8 inch pan.

2nd layer
1.  Cream together 1/2 cup butter, heavy cream and pudding mix until light and fluffy.
2.  Mix in confectioners sugar until smooth.
3.  Spread over bottom layer and chill to set.

3rd layer
1.  While the second layer is chilling, melt the semi-sweet chocolate and 2 tsp. butter together in microwave or over low heat.
2.  Spread over chilled bars.
3.  Let the chocolate set before cutting into squares.

I usually double this and make it in a 13" x 9" inch pan

Yield: 16 squares
