The Ladybugs' Recipes

Raisin-filled Cookies

Ingredients:

Dough:
2 c
2
1 c
1 c
1 tsp
6 c
2 tsp
4 tsp
sugar
eggs, beaten
milk
shortening
vanilla
flour
baking soda
cream of tartar (or baking powder)

Filling:
2 c
1 c
1 T
1 c
ground raisins
sugar
flour
water
Procedure:

1.  Preheat oven to 400ºF.
2.  Mix ingredients of filling in pan and cook, stirring occasionally until thick.
3.  Remove from heat and cool.
4.  Cream together thoroughly the first five dough ingredients.
5.  Add the dry ingredients and blend well.
6.  Roll dough out on floured surface.
7.  Cut into 2" circles.
8.  Place a heaping tablespoonful of filling in center of one cookie round.
9.  Cover with second cookie round.
10.  Seal edges (I use the rounded end of a corn cob holder!)
11.  Bake for about 7 minutes, or until golden brown.

Yields: About 5 dozen cookies.
