The Ladybugs' Recipes

Pinwheel-date Cookies

Ingredients:
Dough:
1 c
1 c
1 c

1 tsp
1/2 tsp
shortening
white sugar
brown sugar
eggs, beaten
flour
baking soda
salt
Filling:
1 lb
1/2 c
1/2 c
1 c
dates, ground
water
sugar
walnuts, finely chopped
Procedure:

1.  Combine filling ingredients in a pan and cook, stirring occasionally until thick.
2.  Set aside to cool.
3.  Combine dough ingredients and blend well.
4.  Turn out onto floured surface.
5.  Roll to 3/8" thickness - in a rectangular shape.
6.  Spread cooled date mixture onto surface of dough.
7.  Roll up into a log.
8.  Wrap in plastic wrap.
9.  Refrigerate over night.

10.  Preheat oven to 400ºF.
11.  With a moistened sharp knife cut into slices (about 1/4").
12.  Place on greased cookie sheet.
13.  Bake for about 8 minutes, or until medium brown in color.

Yields: About 5 dozen cookies.
