The Ladybugs' Recipes

Oriental Chicken Salad

Ingredients:
3 - 4 c

chicken breasts, cooked, cooled & cubed
red cabbage, shredded (1 small head)
(or a blend of half red/half white cabbage)
green onions, chopped
Ramen noodles, Chicken flavored
frozen peas (cooked till just tender, then chilled)
fresh snow-pea pods (snapped & crisped in ice water)
sunflower seeds
cashew pieces
slivered almonds
Dressing:
3/4 c
1 c
3 tsp
 
 
1 tsp
1 tsp
oil (I prefer Olive oil!)
white vinegar (I prefer rice vinegar!)
sugar (or sweetener)
salt
pepper
Accent (optional - I do not use)
garlic powder (optional - I do not use)
Procedure:

Dressing:
Mix the listed ingredients well and refrigerate 3 hours or longer.

Salad:
1.  Cook the Ramen noodles according to package instructions
(Break each package into 9 pieces otherwise the noodles are too long!)
2.  Drain and cool.
3.  Mix the noodles, chicken, cabbage and onions in a salad bowl.
4.  The rest of the ingredients may be used according to your taste.
5.  Add most of the dressing. You may not want to use it all.
6.  Save the rest in case you need to add a bit more at serving time.
7.  Chill and serve. (Best if chilled several hours.)

This is great made without the chicken and served as a side salad!!!
