Layered Spinach Salad

1 bag
1/2 c-1 c
1/2 - 1 lb
1 - 2 cans
2 c
baby spinach, remove stems & cut into bite sized pieces
diced red onion
crisp bacon, crumbled, save some for garnish
sliced water chestnuts
hard boiled eggs, chopped
broccoli or cauliflower or both, chopped

2 c
2 T
1/2 tsp
favorite mayo
brown sugar
curry powder

1.  Make in a 9" x l3" glass cake pan to show off the layers!
2.  Layer about an inch of spinach in pan, layer in any order, red onion, bacon, water chestnuts, eggs, but end with broccoli/cauliflower.
3.  I put another thin layer of spinach on that.
4.  Mix up dressing, smooth over salad like cake frosting up to edges of serving pan.
5.  Top with shredded cheese and bacon garnish.
