Oven-fried Chicken

Ingredients:
1 pkg
1 c
 
1 - 2 c
chicken pieces
no-fat plain yogurt
sage or lemon pepper to taste
plain cornflakes rolled into fine crumbs
Procedure:

1.  Preheat oven to 350F.
2.  Blend seasonings into yogurt.
3.  Clean chicken pieces.
4.  Dip chicken in yogurt - one piece at a time.
5.  Roll piece in cornflakes.
6.  Place pieces on an ungreased (you can use spray) flat pan.
7.  Bake for about 35 - 45 minutes.

It is very crispy and flavourful without many calories and no fat! If you want the underside of the chicken to be crispy, too, set the chicken on the wire cooling racks on the flat pan during cooking. It goes well with salad and rice with stewed tomatoes.
